Hot Coconut V-8 Drink is a slightly spicy, slightly sweet, slightly coconut-ty, and very tomato-y hot beverage–an easy and filling low-calorie snack.
A hot coconut V-8 is one of my favorite afternoon snacks to eat at work because the ingredients are easy to store in my office and the fridge.
There’s no recipe. Just pour an 11.5 ounce can of V-8 (I prefer low-sodium) into a large microwaveable mug along with a short squirt of cream of coconut (not to be confused with coconut milk). It’s rich, so I only use about 1 1/2 teaspoons. Season with a generous sprinkle of garam masala, a spice mixture that’s available at Indian markets but also many regular supermarkets. Another option is to mix the garam masala yourself (google it) or leave it out completely.
Microwave for 2 minutes on HIGH or until hot. Swish thoroughly with a spoon to distribute the heat before letting it pass your lips.
What you get is an Indian-inspired hot beverage that is slightly spicy, slightly sweet, slightly coconut-y, and very tomato-y. It’s about 135 calories per serving if you don’t go crazy with the cream of coconut.
If you care about such things, the side of the can of V-8 claims it contains two servings of vegetables. Seems to me like good medicine if your tummy has been complaining about too many holiday treats here lately.
p.s. I buy pourable cream of coconut at Target and Walmart. You can use the canned, but it’s not as convenient if you are making this at work.
