Crispy Parmesan Yellow Squash (Roasted or Air-Fried)
Thinly slice yellow squash, toss with olive oil, and sprinkle with Parmesan, salt, and pepper. Roast in a hot oven until golden and crisp. Great as a side dish or snack—easy to double or air fry if preferred.
Preheat oven to 450˚F (230˚C). Line a baking sheet with parchment paper or non-stick foil.
Prepare squash: Slice 3 medium yellow squash into ¼-inch rounds and toss with 1 tablespoon olive oil.
Arrange on baking sheet: Spread slices in a single layer on the baking sheet. Avoid overlapping.Sprinkle with ½ teaspoon table or sea salt, 1/4 cup grated Parmesan cheese, and freshly grated pepper, if you like.
Bake for 15-20 minutes until golden brown and crispy.Serve immediately and enjoy!
Air Fryer Option: Air fry at 400°F for 8–10 minutes, shaking halfway through. No oil needed.
