Preheat your oven to 450˚ F (230˚C).If grilling, preheat your grill to medium-high heat.
Trim & Smash: Wash 1 pound fresh okra, and trim the stems. Place in a zip-top bag and smash with a meat mallet or rolling pin until flattened.
Season: Cover a half-sheet pan (cookie sheet) with foil. Pour at 3 tablespoons olive oil onto pan and distribute evenly. Arrange smashed okra on a cookie sheet and stir around so that the okra is covered with a thin coating of oil. Sprinkle with salt and black pepper.
Oven: Arrange on a foil-lined baking sheet and roast for 25-30 minutes, flipping halfway through, until crispy and browned.Grill: Place directly on the grill grates or in a grill basket. Cook for about 5 minutes per side until charred and crispy.
Serve immediately. The crispiness doesn't last long.
