Instructions
Combine all ingredients in a blender: 1 medium apple, cored, unpeeled, and thinly sliced, 3 large eggs, 1 cup unflavored Greek yogurt, ½ teaspoon cinnamon or apple pie spice, a pinch salt, and 1½ cups quick oats. Blend until smooth.
Let batter sit briefly while waffle iron preheats. (Add optional ⅓-½ cup toasted nuts or dried fruit, if using.)
Lightly spray iron; add batter, cook 2-3 minutes until golden.
Cool on rack if not eaten immediately.

A Smaller Recipe: ½ cup quick oats, half of an apple, cored, unpeeled, and sliced, ⅓ cup Greek yogurt, 1 egg, ⅛ teaspoon of cinnamon, and a pinch of salt. Makes 3 4-inch waffles.Batter too thin? Stir in 1–2 tablespoons oats and let the batter rest another minute before cooking.Storage: Freeze waffles individually and reheat in toaster.No waffle maker in the house?
