Low-Calorie Iced Coffee with Cashew Milk (Simple & Creamy)
This low-calorie iced coffee is made with cold brew concentrate, water, and unsweetened cashew milk. It’s a refreshing and creamy drink with just 25 calories per quart—easy to customize and perfect for hot afternoons.
1 cup(227g)cold brew coffee concentrate (decaf or regular)
1cup(227g)unsweetened cashew milk
optional: vanilla extract
optional: sweetener of your choice - (stevia, monk fruit, etc.)
Instructions
Fill a Mason quart jar at least half full of ice.
Add water to the 1-cup line.
Add coffee concentrate to the 2-cup line. Add a little more or less according to how strong you like your coffee.
Top off with unsweetened cashew milk (about 1 cup)
Optional: Stir in ½ teaspoon vanilla extract and sweetener to taste.
Notes
My go-to coffee is hazelnut decaf. I buy whole beans from Winco and grind them fresh before I leave the store. To make a large batch, stir 12 oz of ground coffee into 6 quarts of water. Let it sit on the counter for 12–24 hours, then strain through cheesecloth or a large coffee filter. Store in the fridge for up to 4 weeks.
